1 1/2 cup  cold water
0 3/4 cup  Rice, brown, long grain, dry
1 lb  boneless skinless chicken breasts
1 tbsp  fresh lime juice
0 3/4 tsp  ground cumin
0 1/4 tsp  salt
4 oz  Chili Peppers, green, dices, canned
1 each  small tomato
0 1/4 cup  fresh cilantro
1 cup  shredded mozzarella cheese
  1. Preheat the oven to 400°F.
  2. In medium saucepan, bring water to boil. Add rice, reduce heat, cover, and simmer 25 minutes or until all water is absorbed.
  3. While rice is cooking, place chicken breasts in 9" x 13" baking pan. Cover chicken with lime juice, cumin, salt, and green chilies. Place tomato, cilantro, and cheese on top.
  4. Bake 22 minutes or until juices run clear when pierced with fork. Transfer rice to serving platter and place chicken on top.
