8 oz  smoked turkey sausage
0 1/2 each  chopped green bell peppers
0 1/2 each  yellow onion
16 oz  liquid egg substitute
0 1/4 cup  fat free milk
0 1/4 cup  chopped parsley
4 each  10" flour tortilla
  1. Heat a skillet over medium high heat. Spray the skillet with cooking spray, put the sausage in the pan, and cook for 2 minutes.
  2. Take the sausage out of the skillet and set aside. Spray the skillet with cooking spray again and decrease the heat.
  3. Toss in the bell pepper and onion and cook for 5 minutes.
  4. Add in the egg substitute, milk, and parsley and cook for 2 minutes, stir gently.
  5. Heat the tortillas, fill them with the egg mixture, place the sausage on top and serve.
