2 each  medium apples
2 oz  dried apricots
1 tbsp  packed dark brown sugar
2 tbsp  cold water
0 1/2 tsp  curry powder
0 1/4 tsp  vanilla extract
1 1/2 tsp  margarine
8 oz  sliced ham lunchmeat, extra lean
1 each  cooking spray
  1. Core, peel, and dice apples. Dice dried apricots.
  2. In medium saucepan, add apples, apricots, brown sugar, water, and curry. Bring to boil. Reduce heat, cover, and let simmer 5 minutes, stirring occassionally.
  3. Remove from heat, add vanilla and butter. Stir, cover, and let stand 5 minutes.
  4. Coat skillet with cooking spray and heat to medium-high. Add ham and cook 1 to 2 minutes on each side, until it begins to brown.
  5. Transfer ham to plates and serve with curried apples.
