2 each  medium apples
2 oz  dried apricots
1 tbsp  packed dark brown sugar
2 tbsp  cold water
0 1/2 tsp  curry powder
0 1/4 tsp  vanilla extract
1 1/2 tsp  margarine
8 oz  sliced ham lunchmeat, extra lean
1 each  cooking spray
Directions
  1. In medium saucepan, place apples, apricots, brown sugar, water, and curry and bring to boil. Reduce heat, cover, and let simmer 5 minutes, stirring occassionally.
  2. Remove from heat, add vanilla and margarine, stir, cover, and let stand 5 minutes.
  3. Coat skillet with cooking spray and medium high. Add ham and cook 1 to 2 minutes on each side, until it begins to brown.
  4. Transfer ham to plates and serve with curried apples.
