4 each  small zucchini
2 tbsp  whole wheat flour
3 tbsp  grated Parmesan cheese
1 tsp  ground oregano
0 1/2 tsp  dried basil
1 tsp  paprika
0 1/2 tsp  garlic powder
1/2 tsp  salt
2 each  eggs
1 each  cooking spray
1 tbsp  olive oil
Directions
  1. Preheat oven to 350°F.
  2. Cut zucchini into 1/4" slices.
  3. In large, resealable plastic bag, add flour, cheese, oregano, basil, paprika, garlic powder, and salt.
  4. In large shallow bowl, whisk eggs.
  5. Place all zucchini slices in egg. Toss to coat.
  6. Place all zucchini slices in plastic bag, seal closed, and turn to coat evenly.
  7. Line baking sheet with foil, coat with cooking spray. Arrange zucchini slices. Drizzle with olive oil.
  8. Bake 15 minutes, until zucchini is lightly browned and al dente.
