1 lb  boneless skinless chicken breasts
1 each  cooking spray
1 tbsp  minced garlic
2 each  scallions
2 each  eggs
0 1/2 cup  brown rice flour
2 tbsp  olive oil
1 cup  fresh mushroom slices
0 1/2 tsp  salt
0 1/2 tsp  black pepper
1 tsp  italian seasoning
0 1/2 cup  white wine
0 1/2 tbsp  fresh lemon juice
2 tbsp  chopped scallions
  1. Spray a skillet with cooking spray. Saute garlic and scallions for a few minutes.
  2. Dip chicken in egg, then flour.
  3. Add chicken to pan and brown on both sides. Add butter to the pan, mushrooms, salt, pepper, Italian seasoning, white wine and lemon juice and continue cooking until chicken is cooked through, mushrooms are soft and the sauce thickens.
  4. If needed, add a little extra white wine.
  5. Garnish with scallions and serve.
