Ingredients Directions
  1. Spray a large pot with cooking spray (or coat with vegetable oil) and saute veggies.
  2. Add chicken stock and simmer for about 1 hour.
  3. Cut chicken cutlets into 2 inch pieces and add to simmering broth, along with cooked rice, until chicken is just cooked.
  4. Serve hot.
