4 each  medium tomatoes
8 oz  cooked shrimp
1 each  medium celery stalk
4 tbsp  fresh chopped onion
4 tbsp  light mayonnaise
1 tbsp  Ketchup
2 tbsp  chopped parsley
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 tbsp  fresh lemon juice
  1. Cut tops off of tomatoes and hollow out (reserving pulp and discarding liquid).
  2. Mix thoroughly together tomato pulp with all remaining ingredients.
  3. Refrigerate all ingredients overnight to allow the flavors to blend.
  4. Stuff filling into tomatoes, garnish with parsley, and serve.
