4 cup  cooked sliced beets
1 cup  Juice, apple, unsweetened, canned/btl
2 cup  low fat buttermilk
1 tbsp  fresh dill weed
0 1/4 cup  fresh chives
1 pinch  salt
1 each  medium cucumber
  1. In a blender or food processor, combine the beets, apple juice, and buttermilk and puree until smooth.
  2. Transfer to a bowl and stir in the dill and scallions or chives. Refrigerate for at least 2 hours.
  3. Add salt to taste and serve topped with finely chopped cucumber.
