2 1/4 lb  top loin pork roast
1 tbsp  vinegar
2 each  medium garlic cloves
0 1/2 tsp  salt
0 1/2 tsp  black pepper
1 each  cooking spray
1 tbsp  fresh sage
1 tbsp  fresh oregano
1 tbsp  fresh rosemary
  1. Preheat oven to 350°F.
  2. Spread roast onto cutting board and remove any excess fat.
  3. Roll roast into a long cylinder and tie together with twine, at 1" intervals.
  4. Massage roast with vinegar. Slice numerous 1"-deep pockets into surface and fill slits with garlic slices. Season with salt and pepper.
  5. Lightly coat baking pan with cooking spray, place pork on pan and bake 2 hours, or until meat thermometer reads 180°F.
  6. Sprinkle herbs over roast and serve.
