3 cup  baby carrots
3 tbsp  port wine
1 tbsp  fennel seed
1 tbsp  olive oil
1 pinch  salt
1 pinch  black pepper
  1. Preheat oven to 350 degrees F.
  2. Cut 6 pieces of aluminum foil into squares, big enough to form pouches around carrots.
  3. Split all ingredients equally into the 6 foil pieces. Tightly close foil around carrot mixture to form packages.
  4. Move the packages into the oven and cook until carrots are tender, about 15 minutes. Serve packages piping hot.
