Ingredients Directions
  1. Beat together the egg white and water in a shallow bowl.
  2. On a large plate or shallow bowl, mix the flour, cornmeal, and 2 teaspoons of Creole seasoning.
  3. Rinse each catfish fillet and dry with a paper towel.
  4. Dip each catfish fillet first into the egg mixture, then into the flour mixture, coat evenly on both sides, shaking off any excess flour.
  5. Lightly spray a large nonstick pan with vegetable cooking spray and place over medium heat. Add the 2 teaspoons of oil and heat.
  6. Add fish fillets and cook until fish flakes easily with a fork, about 4 minutes per side.
  7. While fish is cooking, mix the shredded cabbage and carrots, dressing, mayonnaise, and 1/4 teaspoon of Cajun seasoning in a medium bowl.
  8. Split and toast the hamburger buns.
  9. Top the bottom half of the toasted bun with 1 fillet, coleslaw mixture, and tomato, then cover with top bun.
