1 each  whole eggplant
2 each  medium garlic cloves
1 1/2 tbsp  light soy sauce
2 tbsp  fresh cilantro
1 tbsp  fresh lime juice
0 1/4 cup  fresh coconut milk
1 tsp  brown sugar
0 1/4 each  Chili Peppers, red, hot, fresh
1 tsp  fresh ginger root
1 tsp  Peanut Butter, creamy
  1. Preheat the broiler. Cut the eggplant lengthwise into ½ inch thick slices and place on a baking sheet. Combine the garlic and soy sauce and pour over the eggplant.
  2. Broil the eggplant about 6 inches away from heat until browned and tender, about 4 minutes on each side. Remove from the oven and set aside.
  3. Meanwhile, combine the cilantro, lime juice, coconut milk, brown sugar, chile, ginger, and peanut butter, if using. Top the eggplant with the sauce and serve warm or at room temperature.
