5 oz  fresh spinach leaves
2 each  medium garlic cloves
1 1/2 cup  canned cannellini beans
1 cup  chopped scallions
2 tbsp  fresh basil
2 tbsp  fresh lemon juice
5 each  fresh artichokes
1 pinch  salt and pepper
  1. Place about an inch of water at the bottom of a large saucepan. Place on high heat and add spinach, steaming for 2 to 3 minutes. Drain.
  2. In a food processor, puree the spinach, garlic, beans, scallions, basil and lemon juice until very smooth. Fold in the minced artichokes hearts and add more lemon juice and salt to taste. Serve chilled or at room temperature.
