3 cup  Beans, lima, large, mature, cooked
2 each  medium garlic cloves
0 1/4 cup  fresh lemon juice
2 tbsp  fresh dill weed
1 tbsp  fresh mint
1 tsp  olive oil
0.3333 cup  fresh chopped red onion
1 pinch  salt and pepper
  1. In a blender or food processor, puree the limas, garlic, lemon juice, dill, and mint. If needed add about ΒΌ cup of the reserved bean liquid to aid in the pureeing.
  2. Add the olive oil and process until smooth and creamy. Fold in the red onions by hand and add the salt and pepper.
  3. Serve at room temperature or chill for at least an hour and serve cold.
