4 oz  parsley sprigs
2 oz  anchovy fillets
1 1/2 tsp  minced garlic
1 tsp  unsalted tomato paste
4 tbsp  vinegar
1/4 cup  extra virgin olive oil
  1. Dice anchovies. Remove stems from parsley, rinse, dry, and finely chop.
  2. In medium bowl, toss parsley, anchovies, and garlic.
  3. Add tomato paste, vinegar, and olive oil. Mix well.
  4. Let stand at room temperature 2-4 hours before serving.
  5. Serve at room temperature.
