1 1/2 lb  salmon fillet
2 tsp  olive oil
2 tbsp  fresh lemon juice
2 tsp  olive oil
1 each  medium onions
12 oz  roasted red peppers with brine
3 tbsp  Milk, evaporated, nonfat/skim
2 tsp  fresh oregano
1 pinch  salt
1 pinch  black pepper
Directions
  1. Whisk together olive oil and lemon juice. Coat salmon fillets on both sides with mixture. Set the salmon aside at room temperature for 10 minutes.
  2. Preheat broiler.
  3. Pour oil in a small skillet and heat over medium-high heat. Cook the onion in the oil for 5 minutes or until tender.
  4. Using a blender or food processor pulse the onions and red peppers. Pour in the milk and oregano and sprinkle with salt and pepper. Blend until fully combined.
  5. Lay the salmon under the broiler, at least 6 inches from the heat. Cook salmon until it flakes, about 10 minutes.
  6. Warm the sauce in a small pot. Serve sauce over top of salmon or on the side.
