1 each  cauliflower, medium head
0 1/2 cup  fresh chopped celery
0 1/2 cup  reduced fat Italian dressing
2 each  medium garlic cloves
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0 1/4 tsp  hot red pepper flakes
Directions
  1. In a medium saucepan, combine the cauliflower with water to cover. Cover and bring to a boil and then cook for 4 to 5 minutes until tender. Drain.
  2. Mix the cooked cauliflower with the celery in a medium bowl.
  3. Separately, combine the dressing, minced garlic, salt, and pepper, and stir well. Pour the dressing mixture over the salad and toss gently.
  4. Sprinkle red pepper over the top of the salad.
