1 1/2 lb  turkey breast tenderloin, raw
2 tbsp  Flour, white, unbleached, enriched
1 pinch  black pepper
1 pinch  salt
2 tsp  olive oil
1 each  large onion
2 each  medium garlic cloves
1 1/2 cup  canned, crushed tomatoes
1 tsp  fresh rosemary
1 tbsp  fresh thyme
0 1/4 cup  canned black olives
2 tsp  capers
0 1/2 cup  chopped parsley
  1. Combine flour, pepper, and salt in a resealable plastic bag. Place turkey fillets in bag and seal. Shake to coat.
  2. Pour oil in a large skillet heated over medium heat. Arrange turkey in skillet and cook 4 minutes per side. Take turkey out of skillet and reserve.
  3. Using the same skillet, add onion and garlic. Cook for 5 minutes, onions should be slightly brown. Pour in the tomatoes and let boil. Reduce heat and let simmer for 5 minutes.
  4. Place the turkey back in the skillet along with the rosemary, thyme, olives, and capers. Let simmer for 10 minutes. When ready to serve sprinkle parsley over the top.
