2 tsp  olive oil
1 each  medium onions
4 each  medium garlic cloves
2 each  scallions
4 each  fresh plum tomatoes
1 cup  fresh asparagus
0 1/2 cup  low fat unsalted chicken broth
2 tbsp  fresh basil
1 tsp  fresh oregano
0 1/2 cup  sun dried tomatoes
2 cup  cooked long grain brown rice
2 cup  cooked white rice
1 pinch  black pepper
  1. Pour oil in a large skillet and heat over medium heat.
  2. Stir in onions and garlic and cook 5 minutes. Stir in scallions and cook 1 minute.
  3. Mix in the tomatoes, asparagus, and broth. Place lid over skillet and simmer for 3 to 4 minutes.
  4. Stir in the basil, oregano, and sun-dried tomatoes. Simmer, uncovered, for 5 minutes.
  5. Combine mixture with rice and mix well. Serve immediately.
