Ingredients Directions
  1. Flatten chicken breasts to 1/4 inch thickness by placing between two sheets of heavy duty plastic wrap and hitting with a rolling pin or mallet.
  2. Sprinkle the coriander and salt over the chicken and lightly spray with nonstick cooking spray.
  3. Spray nonstick cooking spray in a large pan and heat over medium heat until hot, add chicken and cook until cooked thoroughly, about 6 minutes per side.
  4. Add in 2 tablespoons of the pineapple preserves and cook to glaze chicken on both sides.
  5. In a small bowl, mix the remaining 2 tablespoons of preserves with the pineapple, cilantro, vinegar, and jalapeno peppers, stir well and serve on top of the glazed chicken.
