2 tsp  olive oil
0 1/2 cup  fresh chopped red onion
0 1/2 tsp  curry powder
0 1/4 tsp  ground cinnamon
4 each  boneless skinless chicken breasts
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0.3333 cup  port wine
0 1/4 cup  fat free reduced sodium chicken broth
0 1/4 cup  Preserves, cherry
  1. In a large nonstick pan, heat the oil over medium high heat; saute the onion, curry, and cinnamon for 2 minutes.
  2. Sprinkle the salt and pepper over the chicken, then add to the pan, cooking about 2 minutes per side.
  3. Stir in the wine, broth, and cherry preserves, continue stirring until the preserves have melted.
  4. Lower heat, cover, and simmer until chicken is thoroughly cooked, about 10 minutes.
