2 piece  Bread, whole grain, slice
1 each  olive oil cooking spray
2 each  medium eggs
2 each  egg whites
2 oz  soft tofu
1 pinch  ground cayenne (red pepper)
1 tbsp  dijon mustard
1 pinch  salt and pepper
  1. Toast the bread, and then spray each slice with cooking spray.
  2. Whisk whole eggs, egg whites, tofu, cayenne pepper, mustard, salt, and pepper together in a mixing bowl.
  3. Cook the egg mixture in a greased nonstick skillet over medium-high heat for 1 minute. Serve on toast.
