Ingredients Directions
  1. Remove excess fat from meat. Cut roast, if necessary, to fit into a 3 1/2- or 4-quart slow cooker. Place meat in the cooker. Sprinkle meat wtih fajita seasoning. Add peppers and enchilada sauce.
  2. Cover and cook on low-heat setting for 11 to 12 hours or on high-heat setting for 5 1/2 to 6 hours. Transfer roast to a cutting board. With two forks, shred meat. Stir shredded meat into juices in slow cooker. With a slotted spoon, spoon shredded meat mixture into toasted buns.
