1 lb  Pork, tenderloin, lean, raw
2 each  medium garlic cloves
0 1/2 tsp  salt
0 1/4 tsp  black pepper
1 pinch  paprika
0 1/2 cup  lowfat plain yogurt
1 tbsp  dijon mustard
1 1/2 tsp  tarragon, leaves, ground
2 tsp  extra virgin olive oil
Directions
  1. Preheat the oven to 425 degrees F.
  2. Set the pork on a baking sheet and slice 1/2-inch slits in the pork. Put a garlic slice in each slit. Season with 1/4 teaspoon of salt, pepper, and paprika.
  3. Bake for 22 minutes. Once the pork is cooked, set aside, let sit for 3 minutes, slice diagonally in thin pieces.
  4. Put the rest of the ingredients except the oil in a saucepan and cook for 2 minutes over medium heat. Do not boil.
  5. Take off of the heat, mix in the oil, and serve.
