20 oz  Pineapple, chunks, canned, with juice
2 tsp  margarine
3 tbsp  brown sugar
2 tbsp  rum
0 1/4 tsp  cornstarch
2 tbsp  flaked unsweetened coconut
  1. Drain 1/3 cup of juice from pineapple, and save juice. Drain the rest of the juice from the pineapples and discard.
  2. In a large nonstick pan, melt the margarine over medium high heat. Add pineapple juice, brown sugar, and pineapple chunks; bring to a boil, lower heat, and simmer 2-3 minutes, stir occasionally.
  3. In a small cup, mix the rum and cornstarch, mix well and add to the pan. Cook until slightly thick, about 1 minute.
  4. Serve with sprinkled coconut.
