16 oz  boneless skinless chicken breasts
0 1/4 cup  bread crumbs
1 oz  Cheese, feta, basil & tomato, 1" cube
1 each  cooking spray
1 1/2 tsp  margarine
1 each  fresh spinach, 10 oz. package
0 1/2 cup  fresh basil
1 tbsp  balsamic vinegar
1 tsp  olive oil
0.125 tsp  black pepper
  1. Preheat oven to 400 degrees F.
  2. Arrange each breast in the middle of 2 layers of plastic wrap. Using a meat mallet or heavy skillet, compress to 1/4 inch thickness.
  3. Douse chicken in bread crumbs, making sure to coat evenly. Place 1 tablespoon of cheese onto each breast and roll chicken up. Arrange breasts on a cooking spray coated square baking dish, in one layer. Lightly pour margarine evenly over breasts.
  4. Bake in oven for 25 minutes or until cooked through.
  5. Mix spinach and basil in a bowl. Top with vinegar and oil and season with pepper. Serve chicken on top of salad.
