1 each  cooking spray
1 tbsp  brown sugar
0 1/2 tsp  salt
0 1/2 tsp  ground cumin
0 1/2 tsp  ground coriander
0 1/4 tsp  ground red pepper (cayenne)
1 lb  Beef, top sirloin steak, raw
Directions
  1. Preheat oven to 450°F.
  2. Lightly coat 8" cast iron skillet with cooking spray and place in oven 5 minutes.
  3. In mixing bowl, combine brown sugar, salt, cumin, coriander, and pepper. Mix well.
  4. Massage seasoning onto surface of steak. Move steak to hot skillet.
  5. Cook, uncovered, 7 minutes per side for medium rare.
  6. Remove from oven, allow to rest 5 minutes.
  7. Slice diagonally, across 'grain,' into very thin slices.
