1 piece  Bread, white, soft, slice
4 each  large tomato
0 1/2 cup  low fat buttermilk
0 1/2 cup  Cheese, romano, fresh, grated
1 tsp  black pepper
1 each  Eggs, large, raw
8 tsp  fresh cilantro
  1. Preheat oven to 400 degrees F.
  2. Place bread in a blender and process until ground to measure about 1/2 cup, set aside.
  3. Core the tomatoes and cut in half crosswise, remove seeds by pushing out with thumbs.
  4. Place 1 tablespoon of buttermilk into each tomato half.
  5. In a small bowl, mix the bread crumbles from the blender, cheese, pepper, and egg white. Divide evenly and place into each tomato half.
  6. Spray nonstick cooking spray onto a cookie sheet and place tomatoes on sheet.
  7. Bake for 17 minutes then turn on broiler and broil tomatoes until browned, about 2 minutes. Sprinkle with fresh cilantro and serve.
