1 1/2 cup  Couscous, dry
2 each  fresh tomatoes
4 each  scallions
0 1/2 cup  Cucumber, with o skin, fresh, sliced
1 cup  chopped parsley
0 1/4 cup  fresh lemon juice
2 tbsp  olive oil
1 tsp  ground cumin
1 pinch  black pepper
1 pinch  salt
  1. In large serving bowl, add couscous, tomatoes, scallions, cucumber, and parsley and gently mix.
  2. In small bowl, combine lemon juice, olive oil, and cumin. Season to taste with salt and pepper and stir.
  3. Spoon dressing on top of the couscous and gently combine. Serve immediately or cover and chill.
