0.6667 cup  buckwheat flour
0 1/2 cup  white all purpose flour
1 tsp  low sodium baking powder
0 1/4 tsp  baking soda
0 1/4 tsp  salt
0.125 tsp  ground nutmeg
0 3/4 cup  plain nonfat yogurt
0 1/4 cup  honey
0 1/4 cup  fat free milk
2 tbsp  vegetable oil
0 3/4 tsp  vanilla extract
3 each  eggs
  1. In a large bowl, mix both flours with the baking powder, baking soda, salt, and nutmeg.
  2. In a separate bowl, mix the yogurt, honey, milk, oil, vanilla extract, and egg; add to the dry ingredients and mix until smooth.
  3. Heat a griddle until hot and spoon about 1/4 cup of batter for each pancake.
  4. When top of pancake bubbles and edges look cooked, flip and cook the other side. Remove from griddle and serve.
