1 each  cooking spray
1 1/2 cup  white all purpose flour
0.3333 cup  packed brown sugar
1 tsp  low sodium baking powder
0 1/2 tsp  baking soda
0 1/4 tsp  salt
1 1/2 tsp  pumpkin pie spice
0.3333 cup  seedless raisins
1 each  eggs
0 1/2 cup  Pumpkin, canned, unsalted
0.3333 cup  orange juice
1 tbsp  Margarine, 80% fat, tub
  1. Preheat oven to 400 degrees F. Spray a muffin pan with nonstick cooking spray.
  2. In a large bowl, mix flour, brown sugar, baking powder, baking soda, salt, pumpkin pie spice, and raisins. Make a well in the center.
  3. In a smaller bowl, mix egg, pumpkin, orange juice, and margarine. Add to well of dry ingredients and mix until just moistened. Batter will be thick.
  4. Spoon batter into muffin cups, to 2/3 full.
  5. Bake for 15 minutes.
