0 1/4 tsp  fresh lemon peel
1 tsp  fresh lemon juice
0 1/2 cup  cold water
2 tbsp  brown sugar
2 tsp  cornstarch
2 tsp  amaretto
1 tbsp  margarine
2 cup  fresh blueberries
8 each  amaretto cookies
1 tsp  confectioners sugar
Directions
  1. In a medium pot, mix the lemon peel, lemon juice, water, brown sugar, cornstarch, liqueur, margarine and half of the blueberries. Using the side of a spoon, lightly crush the blueberries. Bring to a boil, stirring constantly, over medium heat.
  2. Add in the rest of blueberries and cook another 2 minutes.
  3. Pour blueberry mixture into 4 dessert cups, top with cookie crumbs, and sprinkle with confectioners? sugar. Serve warm.
