Ingredients Directions
  1. Preheat the oven to 425 degrees.
  2. Mix the blackberries, vanilla, and 1/2 teaspoon lemon rind in a bowl
  3. In a separate bowl, mix the biscuit mix, 1/2 cup and 2 tablespoons yogurt, and the rest of the lemon rind until blended.
  4. Spray a baking sheet with the nonstick cooking spray. Situate 6 mounds of dough onto the sheet and bake for 8 minutes or until slightly golden.
  5. Separate the shortcakes onto 6 bowls and evenly cover with the rest of the yogurt and the berry mixture.
