1 1/2 lb  boneless skinless chicken breasts
1 1/2 tbsp  fresh thyme
.125 tsp  salt
0 1/4 tsp  black pepper
1 tbsp  olive oil
1 tbsp  butter
0 3/4 cup  fresh chopped onion
0 1/2 cup  low sodium chicken broth
0 1/4 cup  balsamic vinegar
2 tsp  low sodium soy sauce
2 1/2 oz  Figs, dried
  1. Cut chicken breasts into 6 equal pieces. Season both sides of chicken breasts with 1-1/2 teaspoons thyme, salt, and pepper.
  2. Chop figs and set aside.
  3. In large skillet, heat oil over medium-high. Sauté chicken 10 minutes per side.
  4. Remove chicken from pan. Cover and set aside.
  5. Return skillet to cook top. Lower heat and melt butter. Add onion and cook 5 minutes until soft. Add broth, vinegar, soy sauce, figs and remaining thyme.
  6. Simmer 3 minutes until sauce is reduced to 1 cup.
  7. Slice chicken lengthwise, move to serving platter and spoon sauce onto chicken.
