1 each  cooking spray
0 1/2 cup  sliced white onion
2 each  medium garlic cloves
3 cup  fresh red cabbage, chopped
0.3333 cup  apple cider
1 1/2 each  medium apples
0 1/4 each  seedless raisins
1 1/2 tsp  curry powder
1 pinch  salt
1 pinch  black pepper
8 each  phyllo pastry dough sheet
  1. Preheat oven to 400°F.
  2. Coat large skillet with cooking spray. Heat over medium. Add onion and garlic. Cook 5 minutes, until soft.
  3. Add cabbage and apple cider. Cover and continue cooking 5 minutes, until cabbage is wilted.
  4. Add apples, raisins, and curry powder. Cook, uncovered, 5 to 8 minutes. Apples will be soft but still crisp and most liquid evaporated.
  5. Sprinkle with salt and pepper.
  6. Remove from heat and let cool.
  7. Spread kitchen towel on counter. Place 1 sheet of phyllo on towel. Coat with cooking spray. Layer second sheet of phyllo and coat with cooking spray. Repeat until 4 sheets are layered.
  8. Spread half of cabbage filling along short edge of phyllo, 1 inch from edge. Roll phyllo from short end with filling, tucking in edges.
  9. Coat baking sheet with cooking spray. Move strudel to baking sheet, seam side down.
  10. Repeat steps 7 - 9 with remaining phyllo sheets and cabbage filling.
  11. Heavily coat tops of strudels with cooking spray.
  12. Bake 15 minutes or until lightly browned. Remove from oven and cool. Slice into 1 inch pieces.
