1 tbsp  canola oil
1 lb  boneless skinless chicken breasts
1 cup  fresh chopped onion
1 each  medium red bell peppers
1 1/2 tsp  minced garlic
0 1/4 cup  heavy whipping cream
1 tbsp  paprika
1 tbsp  tomato paste
1 tsp  caraway seeds
0 1/2 tsp  salt
0 1/4 tsp  black pepper
14 1/2 oz  canned unsalted diced tomatoes
  1. In large skillet, heat oil over medium.
  2. Add chicken and cook until brown, about 5 minutes, stirring frequently. Remove chicken, cover, and set aside.
  3. Add onion, pepper, and garlic to skillet. Cook over medium high heat until onions and peppers are soft, about 3-4 minutes.
  4. Add chicken back to skillet.
  5. Add cream, paprika, tomato paste, caraway, salt, pepper, and canned tomatoes. Stir well to combine. Cover and simmer for 5 minutes until sauce thickens.
