6 cup  cold water
16 oz  barley, pearl
2 3/4 tsp  salt
4 each  medium limes
0.3333 cup  olive oil
1 tbsp  sugar
0 3/4 tsp  black pepper
1 1/2 lb  medium nectarines
1 lb  fresh tomatoes
4 each  fresh green onions
  1. In a large pot, bring the 6 cups of water to a boil over high heat, add barley and 1 1/2 teaspoons of salt, and bring to a boil again.
  2. Lower heat, cover, and simmer until barley is soft and water is absorbed (barley will have a creamy texture), about 45 minutes.
  3. Grate 1 tablespoon of lime peel and squeeze 1/2 cup of lime juice and add to a large bowl. With a whisk, stir in the oil, sugar, pepper, and remaining 1 1/4 teaspoons salt; blend well.
  4. When barley is cooked, rinse with cold running water and drain; add to large bowl with dressing.
  5. Add nectarines, tomatoes, onions, and mint; mix until well coated. Serve at room temperature or refrigerate for up to 1 hour.
