12 oz  fettuccine
3 tbsp  Margarine, soft, 80% fat
1 tbsp  white all purpose flour
0 1/2 cup  fat free milk
0 1/4 cup  grated Parmesan cheese
  1. Begin by cooking the pasta according to the package directions, omitting any salt or fat. Drain well, and then place in a large bowl to keep warm.
  2. In a medium saucepan, melt the margarine over low heat. Add the flour, and stir it until smooth. Stirring constantly, continue to cook for 3 to 4 minutes.
  3. Add the skim milk gradually over medium heat, and cook, stirring constantly, until the mixture is bubbly and thick.
  4. After reducing the heat to low, stir in the parmesan cheese. Cook the mixture stirring frequently, until the cheese melts and the sauce is smooth.
  5. To serve, pour the sauce over the fettuccine and toss gently to coat.
