0 1/4 tsp  lime peel zest
2 tbsp  fresh lime juice
1 tbsp  olive oil
1 tbsp  fresh peppermint
0 1/2 tsp  dijon mustard
0 1/4 tsp  salt
0 1/4 tsp  black pepper
2 cup  fresh watercress, chopped
2 lb  medium peaches
1 each  large jicama
Directions
  1. In a large bowl, whisk together the lime peel, lime juice, honey, oil, mint, mustard, salt, and pepper.
  2. Add the watercress, peaches, and jicama, stir well to coat and serve.
