2 tbsp  margarine
1 tbsp  chopped parsley
0 1/2 tsp  fresh lemon peel
0 1/2 tsp  salt
0.125 tsp  black pepper
1 1/2 lb  small potatoes
  1. Preheat oven to 450 degrees F.
  2. In a large pot, melt the butter with the parsley, lemon peel, salt, and pepper over medium low heat, remove from heat and add potatoes, mix well.
  3. Take a 24 x 18 inch piece of heavy duty aluminum foil, place potato mixture in the center and fold over edges, and pinch to seal.
  4. Place package in a jelly roll pan and bake until potatoes are tender when pierced with a fork through the foil, about 30 minutes.
