Ingredients Directions
  1. In a small bowl mix the cumin, chili powder, vinegar, and cinnamon, rub onto both sides of pork.
  2. In a large nonstick pan, heat oil over medium high heat, add pork and cook until brown, about 3 minutes per side.
  3. Add red peppers, green onions, jalapeno peppers, garlic, corn, oregano, and tomatoes, scrape bottom of pan to loosen brown bits.
  4. Cover, reduce heat, and simmer until pork is tender, about 45 minutes.
