Ingredients

1 tsp  vegetable oil
1 lb  Pork, tenderloin, lean, raw
2 each  large apples
3 oz  unsweetened apple juice frozen concentrate
2 tsp  dijon mustard
0 1/4 tsp  salt
0 1/4 tsp  black pepper
Directions
  1. Spray a large pan with nonstick cooking spray, add oil and heat over medium high heat until hot.
  2. Add pork and brown both sides.
  3. Drain and pat dry with paper towels, set aside.
  4. Spray pan again with nonstick cooking spray and heat over medium high heat, add apple rings, cook until tender.
  5. Add in apple juice concentrate and bring to a boil.
  6. Stir in mustard, salt, and pepper, add pork back in and heat thoroughly.
