0.3333 cup  low sodium soy sauce
1 1/2 oz  honey
0 1/4 cup  orange juice
0 1/4 tsp  garlic powder
0 1/4 tsp  ground ginger
1 lb  chicken tenders
2 tbsp  Yogurt, plain, nonfat
1 tbsp  light mayonnaise
1 1/2 tsp  dijon mustard
1 1/2 tsp  stoneground mustard
4 each  Boston lettuce leaves
4 piece  fresh tomato slices
1 each  red onion
4 each  Rolls, kaiser, 3 1/2"
Directions
  1. In a small bowl, whisk together the soy sauce, 1/4 cup honey, orange juice, garlic powder, and ground ginger.
  2. Place chicken in a shallow dish or freezer bag with a zip top and add marinade, coat chicken evenly, and refrigerate for at least 30 minutes.
  3. Preheat broiler.
  4. In a small bowl, mix the yogurt, mayonnaise, 1 tablespoon of honey, Dijon mustard, and coarse grained mustard, stir well and cover; set aside.
  5. Spray rack of a broiler pan with nonstick cooking spray, remove chicken from marinade and place on broiler pan, place remaining marinade into a small pot.
  6. Bring marinade to a boil, remove from heat and set aside.
  7. Broil chicken 5 1/2 inches from heat (leave door partially opened), baste and turn chicken often. Broil until done, about 8 minutes.
  8. Place 1 slice of lettuce, tomato, and onion on bottom half of toasted roll, add chicken, spread yogurt mixture from step 4 evenly on top of chicken and cover with tops of rolls.
