0 1/2 each  medium onions
1 tsp  fresh thyme
1 tsp  fresh oregano
0 1/4 cup  canola oil
0 1/4 cup  red wine vinegar
1 pinch  salt and pepper
2 each  small apples
8 cup  fresh watercress, chopped
4 oz  Cheese, gorgonzola, crumbles
0 1/2 cup  chopped pecans
  1. To make the dressing, put the onion, thyme, and oregano in a bowl and pour in the canola oil and sherry vinegar. Mix the combination and season with salt and pepper.
  2. Slice the apples in half and core them. Leave the skin on. Then slice the halves into long strips.
  3. Set the watercress in a large bowl and pour the dressing on top. Put the blue cheese and pecans over the salad and position the apples on top.
