2 tbsp  olive oil
1 each  red onion
2 tsp  fresh ginger root
4 each  medium garlic cloves
1 tsp  ground coriander
2 tsp  curry powder
1 cup  canned crushed tomatoes
1 lb  medium zucchini
  1. Pour the olive oil in a nonstick skillet and heat over medium-high. Place the onion, ginger, and garlic in the skillet and sauté for approximately 5 minutes.
  2. Add the curry powder and coriander and cook for another minute.
  3. Mix in the zucchini and tomatoes and simmer for about 10 minutes.
