1 lb  top sirloin steak, lean
0 1/2 cup  low sodium soy sauce
0 1/4 cup  fresh cilantro
1 cup  fresh lime juice
0 1/2 cup  palm sugar
1 tbsp  fish sauce
2 tbsp  olive oil
1 each  red onion
0 1/4 cup  chopped scallions
0 1/4 cup  fresh cilantro
3 each  kaffir lime leaves
  1. Place the soy sauce and cilantro stems in a bowl and marinate the beef for 1 to 2 hours.
  2. Put the lime juice, sugar, and fish sauce in a pot and heat over medium low heat until sugar melts, stir often.
  3. Once the sugar as melted, remove from the pot and let chill.
  4. Heat a sauté pan on high heat for 5 minutes.
  5. Take the sirloin out of the marinade and dispose of the marinade.
  6. Pour the olive oil in the pan and add the beef. Let each side cook for 3 to 4 minutes. Once the beef is done, remove from the pan and cut into thin slices.
  7. Place the red onion, scallions, cilantro leaves, and kaffir lime leaves in a bowl. Then, situate the beef over them and pour the chilled sauce on top.
