1 lb  cooked shrimp
0 1/4 cup  chopped red bell peppers
0 1/4 cup  chopped yellow bell peppers
1 tbsp  fresh cilantro
0 1/4 cup  fresh chives
0 1/4 cup  light mayonnaise
1 tsp  dijon mustard
1 tsp  fresh lemon juice
0 1/4 tsp  white pepper
4 cup  romaine lettuce
  1. Mix together the shrimp, red and yellow pepper, half of the cilantro, and chives in a bowl.
  2. In a separate bowl, mix the mayonnaise, mustard, lemon juice, and white pepper. Pour over the shrimp and mix together.
  3. Place the salad greens on 4 plates and put the shrimp mixture over the top and season with the remaining half of the cilantro.
