1 cup  seedless raisins
2 cup  cold water
0 3/4 cup  SPLENDA® No Calorie Sweetener, granulated
3 each  egg whites
0 1/2 cup  vegetable oil
1 1/2 tsp  vanilla extract
1 cup  unsweetened applesauce
2 cup  white all purpose flour
1 tsp  baking soda
1 tsp  low sodium baking powder
1 1/4 tsp  ground cinnamon
0 1/2 tsp  ground nutmeg
0 1/2 tsp  salt
1 each  cooking spray
Directions
  1. Preheat the oven to 350 degrees F. Coat a 9-in x 13-in baking dish with cooking spray and set aside.
  2. Cover the raisins with water and let stand for 5 minutes.
  3. Drain raisins well and mix with sweetener, egg whites, oil, vanilla, and applesauce at medium speed to blend.
  4. Mix the remaining dry ingredients together and stir into the raisin mixture.
  5. Spread batter in the prepared baking dish.
  6. Bake for 35 to 40 minutes, remove from oven, and let cool before serving.
