1 tbsp  olive oil
0 1/2 cup  grated Parmesan cheese
1 each  medium onions
10 each  eggs
2 tbsp  whole milk
0 1/2 tsp  salt
0 1/4 tsp  black pepper
3 oz  roasted red peppers with brine
  1. Preheat oven to 350°F.
  2. In large nonstick, oven-safe skillet, add oil and onion.
  3. Cook onions over medium until golden brown, stirring frequently, about 15 minutes.
  4. In large bowl, whisk eggs, cheese, milk, salt, and pepper.
  5. Pour egg mix into skillet covering onions. Gently scatter peppers across surface of eggs.
  6. Cook 2 minutes. When edges begin firm, move skillet to oven.
  7. Cook 15 minutes or until eggs puff and edges pull away from side of skillet. Remove skillet from oven. Let rest for 5 minutes.
  8. Cut into 6 pieces. Serve.
