1 tbsp  olive oil
0 1/2 each  medium onions
1 lb  fresh asparagus
0 1/2 cup  cooked chicken breast, diced
0 1/4 cup  chopped red bell peppers
4 cup  fat free reduced sodium chicken broth
2 cup  cold water
0 1/4 cup  long grain white rice
0 1/4 tsp  nutmeg, ground
1 1/2 cup  evaporated skim milk
3 tbsp  white all purpose flour
  1. In a large port, heat oil over medium heat, saute onion until soft.
  2. Add asparagus, chicken, bell pepper, broth, water, rice, and nutmeg, cover, reduce heat, and simmer until rice is cooked, about 25 minutes.
  3. Mix the milk and flour in a small bowl, add to soup and simmer until slightly thickened.
